Quick Pickled Radishes


One of my favourite things about the summer (apart from gardening season!) is using all of my homegrown ingredients in our cooking! Seasonal eating is so important to me and I love being able to grow or source local in season foods for our cooking. This is a quick recipe that doesn’t involve cooking but can be added to so many meals! In the springtime, I always make quick pickled radishes to add to taco night.

If growing radishes, they have a short germination period, usually under 40 days and can be succession planted throughout the growing season. Meaning we plant every 2-3 weeks for continuous harvests. You’'ll have tons to harvest in the spring! Radishes like cooler weather and will bolt if it’s too hot so plant in spring and again mid august for a fall harvest! The two varieties I love are French breakfast and easter egg.

The beauty about pickled radishes is that they can be left whole for a quick on the go snack or sliced to put on-top of tacos (one of our favourites!), salads or even on charcuterie boards.

Ingredients

  • 1 bunch of radishes (10-12) average size radishes)

  • ½ cup apple cider vinegar

  • 1 tablespoon granulated sugar

  • 1 ½ teaspoons salt

  • 1 cup hot or warm water

  • ½ teaspoon coriander seed

Instructions

  1. If slicing your radishes, slice them as thin as possible so they can absorb the mixture of liquids and spices quicker.

  2. Stuff your whole or sliced radishes into a jar that has a lid of your choice, along with your coriander seed.

  3. In a measuring cup, combine apple cider vinegar, salt, sugar and warm water. Stir thoroughly to dissolve the sugar and salt.

  4. Pour the pickling mixture over your sliced radishes and let them set for an hour at room temperature.

  5. After an hour, put the lid on, and store in the fridge where they can stay good for up to three weeks. If you are eating that day, I usually let it sit for 3 hours before serving.
