How to Air Dry Herbs


Adding fresh herbs to your cooking throughout the spring and summer months is seriously one of the best things about gardening if you ask me. Throughout the growing season, I love to regularly harvest herbs and enjoy fresh. In the spring, I dry herbs from my garden before they flower to ensure the flavour is the strongest. I also love to dry herbs in the Fall for the winter months. This helps cut back at least a little bit on your grocery bill, which if you ask me, is always a win! If this is your first time air drying herbs, and you’re not sure where to start, I’m here to guide you along. It’s super easy!

My favourite herbs:

To start, here are some of my favourite herbs to grow and dry:

PERENNIAL HERBS THAT COME BACK EVERY YEAR, OR EVERGREEN:

  • Sage

  • Rosemary

  • Oregano

  • Mint (Ensure this is planted separately from other herbs as it will quickly overrun the rest of your herbs!)

  • Thyme

HERBS THAT ARE ANNUAL OR BIENNIAL:

  • Parsley

  • Basil

  • Cilantro

How to air dry herbs:

  1. Wash the herbs and let them dry on a tea towel for a few hours.

  2. Once dry (if herbs are wet it will mold, so make sure they are dry!), tie small bundles together. This allows them to dry faster and have more airflow. I always hang upside down.

  3. Use can use a coat hanger, twine or reuse twist ties and separate enough so they aren’t touching.

  4. Hang in a cool (or room temperature), dark and dry place for 2-3 weeks depending on the moisture in your home, and avoid direct sunlight. I have had success hanging in the kitchen that doesn't get direct sun. Laundry rooms are also a popular location.

  5. Once dry, put into sealed jars in the spice drawers and use within the year.
