Breaded Avocado Tacos — That's Vegan!
We are all about the tacos these days! We have always loved tacos in our house (I would say we make them once a week) and since we stopped eating meat 4 years ago we started to get creative with our fillings. We love quinoa & bean, tofu and cauliflower tacos but our favourite to date has to be these breaded avocado tacos!
You have a few options with these tacos to work with your dietary restrictions or preferences. You can use gluten free bread crumbs and wraps to make it gluten free. You can add dairy to your sauce or keep it the way it is!
The trick is to find avocados that are perfectly ripe. If they are too soft it will be hard to bread and bake. We like to use a silicone mat on our baking sheet (worth the investment) or you can use parchment paper.
This recipe takes less than 30 minutes to make!
Ingredients (4 Servings)
Breaded Avocados
3 Ripe avocados
1 Cup of bread crumbs (GF or not)
2 Tbsp of oil
3 Tbsp unsweetened oat milk
1/2 Tsp garlic powder
1/2 Tsp cumin
Pinch of salt and pepper
For Serving
6-8 tortillas
Cilantro
Green onions
1/4 Cabbage
Vegan green sauce (we bought one from our local grocery store or find a green sauce recipe online)
Instructions
Preheat the oven to 450 degrees F. Add a silicone mat or parchment paper onto a baking tray.
Get two small bowls. Add the bread crumbs with cumin + garlic powder to one bowl (mix well) then add the oil + oat milk in the other (whisk together). Cut the avocados into strips, you should get min 6 pieces per avocado. One by one you’ll dip each avocado piece into the oil/oat milk mixture first than the breadcrumbs second (cover as much as possible) and set it on the baking tray. Add in the oven and bake for 10-12 minutes or until golden brown.
While the avocados are in the oven, cut up the cabbage, green onions and cilantro. Once the avocados are done, let them cool and eat while it’s hot! Add your toppings and sauce onto your tortilla and enjoy!
