Easy Swiss Chard Cakes Recipe

We find so much beauty in chard, it’s like a rainbow in the garden! It also brings colour to the vegetable section at the grocery store. Chard or Swiss chard is a green leafy vegetable that is often overlooked. There’s many ways to eat chard, our favourite way is making chard cakes with it.

We grow chard in our backyard garden, it’s the plant that keeps on giving! We grow chard all year long, it loves the cooler months but also does well in the summer. It grows back as you pick it and the colourful stock gives a vibrant look to your garden bed.

Our chard cake recipe is an easy one. It doesn’t take much effort and it uses up the whole chard plant. Zero waste gardening is always our goal, oh and it’s a vegetarian recipe too. All you need is a cutting board, knife and one big mixing bowl!

Ingredients

4 cups of Swiss chard finely chopped
2 cups of grated potato
1/4 cup of finely chopped onions
1 tsp Garlic minced
2 Eggs
4-5 tbsp of Panko (or you can do flour)
1/4 cup Parmesan grated
1/2 cup Cheddar cheese grated
1/4 cup Cilantro chopped
1/2 tsp Salt
1/2 tsp Pepper

Prepare the Vegetables

  • Clean, wash and pat the Swiss chard well with a swedish cloth or tea towel

  • Finely chop the whole plant- stem and everything

  • Clean, peel and grate the potatoes

  • Clean and chop onions as finely as you can.

Prepare the Batter

  • Add all ingredients in a bowl.

  • Starting with the Swiss chard & potato- mix well.

  • Then, add in the finely chopped onion and grated garlic - mix well.

  • Followed by the cheeses and herbs.

  • Next, add in the panko, salt, and pepper - and mix well.

  • Lastly, add the eggs - mix well.

Fully prepared Swiss Chard Cake, plated with a side of pesto.

Put some in your hand like you’re making your own veggie or hamburger and make it into a patty shape. It won’t be perfect and add a little more panko if you need to bind it. These chard cards are a little messy but taste fabulous!

Add oil to the frying pan and heat on medium. Once it’s warm add the chard cakes and fry until both sides are a little golden brown.

Sauce it up with a pesto or garlic aioli on the side.
