The Perfect Fall Side Dish: Parmesan Carrots
The garden is busting with carrots right now and I am here for it! I have planted more carrots in September to harvest after the first frost date too. Did you know carrots get sweeter if you harvest after your first frost?
Planting and growing carrots can be a little tricky and here’s a blog on my top 5 tips to growing carrots in raised beds. You can plant carrots in the spring until end of September. There’s even some varieties you can over winter and harvest in February depending on where you live.
This carrot dish is a perfect appetizer or side dish to any meal. It will be a crowd pleaser (I promise!) and it’s SO simple. If you just started following my blog, you’ll see I like mostly simple, easy to make recipes from the garden. Seasonal eating is such a beautiful thing and I hope I can inspire you to grow carrots or support your local farmers during the market season.
Ingredients:
5 carrots
1 tbsp chilli powder
1 tbsp cumin
2 tbsp curry powder
2 tsp olive oil
1 cup grated parmesan (Feel free to add more if you like it extra cheesy!)
Fresh parsley, chopped for garnish
Directions:
Pre-heat your oven to 350ºF. While the oven pre-heats, begin by slicing your carrots lengthwise. Depending on how thick your carrots are, you may have to slice them a couple of times.
In a large bowl, combine your olive oil and carrots. Coat the carrots and then add them to your baking dish.
Add chilli powder, curry powder and cumin with a pinch of salt and pepper into a bowl and stir. Sprinkle evenly over the carrots.
Top with your grated parmesan cheese and freshly chopped parsley.
Cover your dish and bake in the oven for 15-20 minutes. Remove the cover, and broil for 5 minutes. Allow to cool slightly after removing from the oven, and serve. Enjoy!
