Thyme & Maple Glazed Turnips
This year, we grew a handful of new things in our garden, one of them being turnips! I’m happy to report that they did super well in our garden after we started them in March, and we harvested them a couple of weeks ago (in June!). Since then, I’ve been thinking up a ton of ways to add turnips to our meals, and one that I tried and just had to share with you is this thyme & maple glazed turnip recipe! It’s sweet and hardy, and makes a perfect side dish (in fact, I think this would make a great Thanksgiving side dish!).
In case you’re curious & you want to grow the exact same variety of turnips we did and used in this recipe, we loved this Purple Prince* variety from West Coast Seeds!
* Note: this turnip variety matures in approximately 55 days.
Ingredients
8 medium-size turnips
2 tablespoons maple syrup
2 tablespoons olive oil
1 teaspoon fresh thyme
2-3 sprigs of thyme for garnish
Instructions
Preheat your oven to 400°F. While your oven is preheating, wash and chop your turnips into 1-inch pieces, and place in a large bowl.
In the bowl, toss the turnips in your neutral oil of choice, and maple syrup. When everything is well coated, pour your turnips into a pan or baking dish and season with a pinch of salt, pepper & thyme.
Cover with tinfoil and bake for 20-25 minutes, or until fork tender.
Add sprigs of thyme for garnish, serve and enjoy!
