Summer Garden Recipe: Garlic Scape Green Sauce

How’s everyone’s summer going? How is your garden growing? I just came in from my garden and I’m happy to report…it’s time for garlic scapes!

Today, I want to share one of my favourite summer garden recipes. We’ll be making garlic scape green sauce — AKA put on everything sauce! You can add this to tacos, sandwiches, pastas, salads and more. Garlic scapes taste just like garlic (although a bit milder) and are also perfect to purée for sauces, pestos, soups and more. I always make my green sauce this time of year as I harvest the garlic scapes from my garden.

But wait, what’s a garlic scape?

Garlic scapes are the tender stem and flower bud of a garlic plant. Scapes first grow straight out of the bulb, curl once or twice and then are ready to be cut at the bottom of the stem. They look a bit like chives, scallions or long, curvy green beans. See these photos? So cool!

The first time I grew garlic I had no idea what a scape was. Now I look forward to harvesting them every year to make all kinds of sauces! Garlic scapes can be eaten raw or cooked up — simply wash the scapes and trim the end and the bud. To make them last longer, you can chop scapes up, freeze them and use as you would garlic throughout the year.

Didn’t grow garlic? No problem — you can find garlic scapes at farmers’ markets or specialty grocery stores that focus on supporting local farmers. Most recipes use 5-6 scapes, so start small! Once you start using them you’ll be hooked and want green sauce to last you all year! 

All right, I think we’re ready to start making our garlic scape green sauce. Don’t be afraid to make extra as this recipe freezes well! If you are freezing the sauce in glass, just remember to fill up to only 3/4 full, as glass expands. I like to freeze in ice cube trays so I can use a little bit at a time when I want it. 

Ready to get started? Grab your food processor or blender (I love my Vitamix - shop here!) and let’s go. :)

Garden fresh ingredients:

  • 5-6 garlic scapes, chopped

  • 1/4 cup fresh oregano, chopped

  • 1/4 cup fresh parsley, chopped

  • 1 medium shallot, chopped

  • 3/4 cup apple cider vinegar

  • 3/4 cup olive oil

  • 1 tsp salt

Garlic scape green sauce recipe:

  1. Gather all ingredients and chop the vegetables.

  2. Add all ingredients to your food processor or blender.

  3. Blend well — and voilà! You’ve made a delicious green sauce.

  4. Store in a covered container or lidded jar in the fridge and enjoy within a week, or freeze for later!
